About Us

Royal Chef Selection is an Australian Owned business which opened its doors on the 9th October 2006. Royal Chef Selection is managed by Dominick Melrose a 6th generation butcher with a family history in the butchery trade dating back to 1883 in Australia alone. This is when his great great grandfather arrived in Australia as a Master Butcher from Glasgow, the son of a Master Butcher. This heritage has since continued uninterrupted through all generations since in Australia. The Melrose Family have been involved in every facet of the industry from growing right through to the retail Market at different times, at one stage operating the largest service works in Australia producing 10,000 lambs per week for domestic and export requirements.

We are passionate about the direction of the Meat industry within Australia and want to maintain the high standards set by it’s peak councils. This is why the Melrose family has for the past three generations sought to be involved on industry councils such as Australian Meat Indusrty Council in which Dominick is currently the State Retail Deputy Chair, so we can influence important issues and provide leadership within the industry.

Royal Chef Selection’s quality and consistency of service is reflected in its wide range of valued clients that include food chains, institutions, hotels, restaurants and cafes. In it’s relatively short life Royal Chef Selection has expanded its range of products now including an ever increasing range of cooked products tailor made to suit individual customer requirements.

We also understand the reasons for personalised service and adaptability within our organisation, allowing us to take on many other production jobs ranging from the processing of blood for export customers, to maintaining our business partner’s organic program by processing certified organic products.
